Ingredients

  • Glug of olive oil
  • 3 Onions
  • 3 Garlic cloves
  • 1 Carrot
  • 1 Pack of smokey bacon
  • 1 Tbsp of hot chilli powder
  • 1 Tbsp of smoked paprika
  • 1 Tbsp of turmeric
  • 1 Tsp of cumin
  • 2 tins of chopped tomatoes
  • 2 tins of kidney beans
  • 2 tins of butter beans
  • 1 tin of baked beans
  • 2 tins of boiling water
  • 1 Knor stock pot (Beef)
  • Dash of Worcestershire sauce
  • Salt & Pepper
  • 4 Garlic bread baguettes

Method

First, heat up the oil in a large pan then add the garlic and finely chopped onions until soft and translucent. Add the chopped bacon and put on a low simmer until the bacon fat has softened and started to melt down.

Finely chop the carrot and add to the pan, stir and cover to let the carrot soften for a few minutes.

Add the herbs and spices and stir thoroughly. Once mixed in, allow to simmer gently with the lid on for a few minutes.

Add the rest of the ingredients and place on to a low simmer for about 3 hours. Allow time to cook the garlic bread before serving with American long grain rice.
